- 1 pound chicken breast, cooked and shredded
- 4 slices turkey bacon, crumbled
- 1 can white beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1/4 cup cilantro, chopped
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Add shredded chicken, beans, corn, chicken broth, and spices. Stir to combine.
- Bring to a simmer and cook for 20 minutes.
- Stir in cilantro and crumbled turkey bacon just before serving.
Notes
