  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the sugars with the oil until combined. Add the pumpkin and eggs, and beat well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cooling before frosting with your favorite cream cheese frosting.

Notes

  • These cupcakes can be made in advance and stored in an airtight container.
  • Try adding chocolate chips for an extra treat!
