- 2 tablespoons vegetable oil
- 1 pound chicken breast, sliced
- 4 cups chicken broth
- 1 can (14 ounces) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 cup sliced mushrooms
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 1 cup fresh cilantro, chopped
- Cook the rice noodles according to the package instructions, then set aside.
