  • 1 tablespoon sugar
  • 1 cup sliced mushrooms
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 1 cup fresh cilantro, chopped

Instructions

  1. Cook the rice noodles according to the package instructions, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced chicken and cook until browned.
  3. Add the chicken broth, coconut milk, curry paste, fish sauce, and sugar to the pot, stirring to combine.
  4. Bring the mixture to a simmer and add the mushrooms and bell pepper. Cook for about 5 minutes, or until the vegetables are tender.
