- 1 pound chicken breast, sliced
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons red curry paste
- 8 ounces rice noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 2 green onions, chopped
- 2 tablespoons fresh cilantro, chopped
- Heat the oil in a pot over medium heat and add the sliced chicken. Cook until browned.
- Add the chicken broth, coconut milk, and red curry paste. Stir well and bring to a simmer.
- Add the rice noodles, bell peppers, and carrots. Cook for 5-7 minutes until the noodles are tender.
- Stir in the green onions and cilantro before serving.
