Thai Chicken Noodle Soup

A warm and hearty Thai Chicken Noodle Soup that brings comfort to every bowl.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 8 ounces rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 2 green onions, chopped
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat the oil in a pot over medium heat and add the sliced chicken. Cook until browned.
  2. Add the chicken broth, coconut milk, and red curry paste. Stir well and bring to a simmer.
  3. Add the rice noodles, bell peppers, and carrots. Cook for 5-7 minutes until the noodles are tender.
  4. Stir in the green onions and cilantro before serving.

Notes

  • Adjust the spice level by adding more or less curry paste.
