- 1 pound ground beef
- 1 can black beans, drained
- 1 cup corn kernels
- 1 packet taco seasoning
- 2 cups tortilla chips
- 2 cups shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef and drain excess fat.
- Add black beans, corn, and taco seasoning to the skillet. Stir well and cook for 5 minutes.
- In a casserole dish, layer half of the tortilla chips, followed by the beef mixture, and then half of the cheese.
- Repeat the layers and top with diced tomatoes and green onions.
- Bake in the oven for 25-30 minutes until the cheese is melted and bubbly.
Notes
- For a spicier dish, add some jalapeños to the layers.
