Taco Casserole

A savory Taco Casserole that combines delicious flavors in a comforting dish perfect for any gathering.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and drain excess fat.
  3. Add black beans, corn, and taco seasoning to the skillet. Stir well and cook for 5 minutes.
  4. In a casserole dish, layer half of the tortilla chips, followed by the beef mixture, and then half of the cheese.
  5. Repeat the layers and top with diced tomatoes and green onions.
  6. Bake in the oven for 25-30 minutes until the cheese is melted and bubbly.

Notes

  • For a spicier dish, add some jalapeños to the layers.
  • This casserole can be made ahead and stored in the refrigerator before baking.
