  • 1 medium yellow squash
  • 1 cup crumbled feta
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine spinach, zucchini, squash, and feta.
  3. In another bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
  4. Pour the egg mixture over the vegetables and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes
