  • 2 acorn squashes
  • 1 pound sausage
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 2 cups bread crumbs
  • 1 cup chicken broth
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. In a skillet, cook the sausage until browned.
  4. Add onion, celery, and garlic; sauté until soft.
  5. Stir in thyme and sage, then mix in bread crumbs and chicken broth.
  6. Stuff the mixture into each acorn squash half.
  7. Top with shredded cheese.
  8. Bake in the oven for 30-35 minutes until the squash is tender.
