2 fillets salmon
1 cup orzo pasta
2 cups broccoli florets
2 tablespoons olive oil
1 lemon, zested and juiced
2 tablespoons fresh parsley, chopped
1 teaspoon garlic, minced
Salt to taste
Pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet, drizzle with olive oil, lemon juice, and season with salt and pepper.
Bake the salmon for 12-15 minutes, or until cooked through.
Meanwhile, cook the orzo according to package instructions. In the last 3 minutes of cooking, add the broccoli to the pot.
Drain the orzo and broccoli, then return to the pot. Stir in lemon zest, garlic, parsley, and additional olive oil if desired.
Plate the lemon-herb orzo and broccoli, top with the baked salmon, and serve.
