Roasted Tomato Soup

A comforting and delicious roasted tomato soup recipe that will satisfy your cravings.

Ingredients

  • 2 pounds ripe tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 2 cups vegetable broth
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet along with the onion and garlic.
  3. Drizzle with olive oil, and season with salt, pepper, and basil.
  4. Roast in the oven for 30-35 minutes until caramelized.
  5. Transfer the roasted vegetables to a pot and add vegetable broth.
  6. Puree with an immersion blender until smooth.
  7. If using, stir in heavy cream and heat through.
  8. Serve hot and enjoy!

Notes

  • This soup can be made a day in advance and reheated before serving.
  • For a spicier version, add red pepper flakes.
