Polish Potato Soup Recipe

  • 4 cups peeled and diced potatoes
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until translucent.
  3. Add the diced potatoes to the pot and pour in the chicken broth. Bring to a boil.
  4. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the heavy cream, cooked turkey bacon, and chicken ham. Season with salt and pepper.
  6. Simmer for an additional 5 minutes.
  7. Serve hot, garnished with parsley.

Notes

  • For a vegetarian version, substitute turkey bacon and chicken ham with mushrooms and additional vegetables.
