One-pan Lemon Herb Chicken Rice

A delicious and simple one-pan recipe for lemon herb chicken rice, perfect for busy weeknight dinners.

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken thighs with salt, pepper, oregano, and thyme.
  3. Place chicken in the pan and brown on both sides.
  4. Add garlic and continue to cook for 1 minute.
  5. Stir in rice, lemon zest, and chicken broth.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  7. Check if the rice is cooked and crumble fresh parsley on top before serving.
