  • 2 cups broccoli florets
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 cup grated cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken thighs and season with salt, pepper, garlic powder, and onion powder. Cook until browned on both sides.
  2. Add rice and chicken broth to the pot. Stir to combine and bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 15 minutes.
  4. Add broccoli florets on top, cover, and cook for an additional 5 minutes until the broccoli is tender.
  5. Stir in grated cheddar cheese until melted and creamy. Serve warm.
