- 4 chicken thighs bone-in, skin on
- 2 cups basmati rice
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 can chickpeas, drained
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 1/4 cup raisins
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
- Heat the olive oil in a large pot over medium heat.
- Add the chicken thighs and brown them on all sides, about 5-7 minutes.
- Remove the chicken and set aside. In the same pot, add the onions and garlic, sautéing until translucent.
- Stir in the spices and cook for another minute until fragrant.
- Add the rice, chicken broth, chickpeas, raisins, and the browned chicken back to the pot.
- Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve.
Notes
- For extra flavor, marinate the chicken in spices overnight.
