Moroccan Chicken & Rice

  • 4 chicken thighs bone-in, skin on
  • 2 cups basmati rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can chickpeas, drained
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 1/4 cup raisins
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown them on all sides, about 5-7 minutes.
  3. Remove the chicken and set aside. In the same pot, add the onions and garlic, sautéing until translucent.
  4. Stir in the spices and cook for another minute until fragrant.
  5. Add the rice, chicken broth, chickpeas, raisins, and the browned chicken back to the pot.
  6. Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
  7. Fluff the rice with a fork, garnish with fresh cilantro, and serve.

Notes

  • For extra flavor, marinate the chicken in spices overnight.
  • Adjust spices according to your taste preference.
