  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 12 strawberries, washed and hulled
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine crushed graham crackers, sugar, and melted butter.
  3. Press the mixture into the bottom of mini cupcake liners.
  4. In another bowl, beat cream cheese until smooth, then add powdered sugar, vanilla extract, and sour cream.
  5. Pour the cream cheese mixture over the crusts in the cupcake liners.
  6. Bake for 15-20 minutes until set.
  7. Let cool completely, then refrigerate for at least 2 hours.
  8. While the cheesecakes chill, melt chocolate chips in a microwave-safe bowl.
  9. Dip each strawberry into the melted chocolate, allowing excess to drip off.
  10. Place chocolate-covered strawberries on a baking sheet and refrigerate until set.
  11. Once the cheesecakes are chilled, top each with a chocolate-covered strawberry before serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • These cheesecakes can be made a day in advance.
