- 1 cup crushed graham crackers
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 12 strawberries, washed and hulled
- 1 cup semi-sweet chocolate chips
- Preheat the oven to 325°F (163°C).
- In a bowl, combine crushed graham crackers, sugar, and melted butter.
- Press the mixture into the bottom of mini cupcake liners.
- In another bowl, beat cream cheese until smooth, then add powdered sugar, vanilla extract, and sour cream.
- Pour the cream cheese mixture over the crusts in the cupcake liners.
- Bake for 15-20 minutes until set.
- Let cool completely, then refrigerate for at least 2 hours.
- While the cheesecakes chill, melt chocolate chips in a microwave-safe bowl.
- Dip each strawberry into the melted chocolate, allowing excess to drip off.
- Place chocolate-covered strawberries on a baking sheet and refrigerate until set.
- Once the cheesecakes are chilled, top each with a chocolate-covered strawberry before serving.
