Mexican Street Corn Pasta Salad

A delicious and easy Mexican Street Corn Pasta Salad that combines the flavors of street corn with pasta. Perfect for weeknight dinners.

  • 8 ounces pasta of choice
  • 2 cups corn, grilled or canned
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/2 cup fresh cilantro, chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, red bell pepper, red onion, jalapeño, cilantro, and feta cheese.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables, and toss to coat.
  6. Serve immediately or refrigerate for an hour to enhance flavors.

Notes

  • For a spicier salad, leave some seeds in the jalapeño.
  • This salad can be made a day in advance for convenience.
