- 8 ounces pasta of choice
- 2 cups corn, grilled or canned
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced
- 1/2 cup fresh cilantro, chopped
- 1 cup feta cheese, crumbled
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the corn, red bell pepper, red onion, jalapeño, cilantro, and feta cheese.
- Add the cooled pasta to the vegetable mixture.
- In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta and vegetables, and toss to coat.
- Serve immediately or refrigerate for an hour to enhance flavors.
Notes
- For a spicier salad, leave some seeds in the jalapeño.
