Mexican Quinoa Salad with Honey Lime Vinaigrette

A refreshing and vibrant Mexican Quinoa Salad drizzled with a honey lime vinaigrette.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • salt to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa and simmer for 15 minutes or until all water is absorbed.
  3. In a large bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
  4. In a separate bowl, whisk together lime juice, honey, olive oil, cumin, and salt.
  5. Once the quinoa is cooked, let it cool, then add it to the vegetable mixture.
  6. Pour the dressing over the salad and toss well to combine.
  7. Serve chilled or at room temperature.

Notes

  • For added crunch, include some chopped nuts or seeds.
  • This salad can be made a day in advance to enhance flavors.
