Lemon Chicken Orzo Soup

A comforting and delicious soup that combines the bright flavor of lemon with tender chicken and orzo pasta.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 lemon, juice and zest
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  2. Add the garlic, thyme, and oregano, and sauté for another minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breasts and orzo, reducing heat to a simmer. Cook until the chicken is cooked through, about 15 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the spinach, lemon juice, and zest. Cook until the spinach is wilted.
  7. Season with salt and pepper to taste, and serve hot.

Notes

  • This soup can be made ahead of time and frozen for later use.
  • For a richer flavor, add parmesan cheese on top before serving.
