- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 6 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 lemon, juice and zest
- Salt and pepper, to taste
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add the garlic, thyme, and oregano, and sauté for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breasts and orzo, reducing heat to a simmer. Cook until the chicken is cooked through, about 15 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the spinach, lemon juice, and zest. Cook until the spinach is wilted.
- Season with salt and pepper to taste, and serve hot.
Notes
- This soup can be made ahead of time and frozen for later use.
- For a richer flavor, add parmesan cheese on top before serving.
