Iced Gingerbread Oatmeal Cookies

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup powdered sugar for icing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, combine the rolled oats, flour, spices, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes, until golden brown.
  8. Allow cookies to cool on a wire rack before icing.
  9. To make icing, mix powdered sugar with water until smooth, then drizzle over cookies.
