- 4 large potatoes, diced
- 1 cup cheddar cheese, shredded
- 4 slices turkey bacon, cooked and crumbled
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add garlic and sauté for 1 minute.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream, thyme, rosemary, salt, and pepper.
- Add cheddar cheese and bacon; cook until cheese is melted.
- Serve hot, garnished with additional cheddar and bacon if desired.
Notes
- For a thicker soup, blend a portion of the potatoes before adding cream.
