Hearty Cheddar Garlic Herb Potato Soup

A delicious and hearty soup featuring cheddar cheese, garlic, herbs, and turkey bacon.

Ingredients

  • 4 large potatoes, diced
  • 1 cup cheddar cheese, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add garlic and sauté for 1 minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream, thyme, rosemary, salt, and pepper.
  5. Add cheddar cheese and bacon; cook until cheese is melted.
  6. Serve hot, garnished with additional cheddar and bacon if desired.

Notes

  • For a thicker soup, blend a portion of the potatoes before adding cream.
  • Feel free to add vegetables like carrots or celery for extra flavor.
