  • 1 cup diced strawberries
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the mashed bananas, diced strawberries, honey, almond milk, and vanilla extract.
  3. In another bowl, mix the whole wheat flour, rolled oats, baking powder, baking soda, and salt.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack.

Notes

  • For added flavor, sprinkle some cinnamon on top before baking.
  • These muffins can be frozen for up to 3 months.
