French Onion Chicken Orzo Casserole

A delightful and hearty dish combining the flavors of French onion soup with chicken and orzo, topped with crispy turkey bacon for added texture.

  • 1 pound boneless chicken breasts, diced
  • 1 cup orzo pasta
  • 4 slices turkey bacon, chopped
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  3. Add sliced onions and cook until caramelized.
  4. Add diced chicken to the skillet and cook until no longer pink.
  5. Stir in beef broth, orzo, garlic powder, thyme, salt, and pepper. Bring to a boil.
  6. Transfer the mixture to a baking dish and sprinkle mozzarella cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the orzo is tender and the cheese is bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • For more flavor, you can add a splash of white wine to the skillet before adding the broth.
  • Feel free to substitute the chicken with cooked rotisserie chicken for a quicker version.
