French Onion Chicken Orzo Casserole

A delicious and comforting casserole combining the flavors of French onion soup with tender chicken and orzo.

  • 1 pound orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup grated Gruyere cheese
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add the sliced onion and cook until caramelized, about 15 minutes.
  3. In a large pot, combine the cooked orzo, shredded chicken, caramelized onions, beef broth, thyme, salt, and pepper.
  4. Transfer the mixture to a greased casserole dish.
  5. Top with grated Gruyere cheese.
  6. Bake for 25-30 minutes, or until cheese is bubbly and golden.

Notes

  • For extra flavor, you can add a splash of Worcestershire sauce.
  • Make sure not to overcook the orzo before baking.
