- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup orange juice
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh cranberries
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1 teaspoon cinnamon
- 1/4 cup chopped walnuts
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, eggs, orange juice, and vanilla extract.
- Combine the wet and dry ingredients, then gently fold in the cranberries.
- In a small bowl, mix the brown sugar, oats, cinnamon, and walnuts to make the streusel topping.
- Spoon the batter into the prepared muffin tins, filling each about 2/3 full. Sprinkle the streusel mixture on top.
