  • 1/2 cup unsalted butter, melted
  • 2 large eggs

  • 1 1/2 cups fresh cranberries
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, eggs, orange juice, and vanilla extract.
  4. Combine the wet and dry ingredients, then gently fold in the cranberries.
  5. In a small bowl, mix the brown sugar, oats, cinnamon, and walnuts to make the streusel topping.
  6. Spoon the batter into the prepared muffin tins, filling each about 2/3 full. Sprinkle the streusel mixture on top.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let them cool for a few minutes before transferring to a wire rack.
