Ingredients

  • 4 cups vegetable broth
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for another minute.
  3. Stir in wild rice, vegetable broth, thyme, rosemary, and bay leaf. Bring to a boil.
  4. Reduce heat and simmer for 45 minutes, or until rice is tender.
  5. Add kale and cream. Stir and cook for an additional 10 minutes.
  6. Season with salt and pepper to taste. Serve warm.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • For a vegan version, substitute heavy cream with coconut milk.
