Chicken Pot Pie Soup

A warm and hearty soup that combines the classic flavors of chicken pot pie with the savory addition of turkey bacon.

  • 1 pound turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups frozen mixed vegetables
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, sauté the onions until translucent, then add garlic and cook for another minute.
  3. Add chicken broth and bring to a simmer.
  4. Stir in the frozen mixed vegetables and shredded chicken, cooking until heated through.
  5. In a separate bowl, whisk together flour and milk until smooth, then gradually add to the pot.
  6. Cook until the soup thickens, stirring frequently. Season with thyme, salt, and pepper.
  7. Serve hot, garnished with crumbled turkey bacon.
