Chicken Fajita Casserole

A delicious and easy chicken fajita casserole recipe that’s perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups shredded cheese
  • 1 tablespoon taco seasoning
  • 1 jar salsa
  • 12 tortilla chips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, bell pepper, onion, taco seasoning, and salsa.
  3. In a baking dish, layer half of the chicken mixture, half of the tortilla chips, and half of the cheese. Repeat the layers.
  4. Bake for 25-30 minutes until the cheese is bubbly and golden.
