Cheesy Ranch Potatoes and Smoked Sausage

  • 2 pounds baby potatoes
  • 1 pound smoked sausage
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them in a large mixing bowl.
  3. Add the olive oil, ranch seasoning, garlic powder, salt, and pepper. Toss to coat.
  4. Cut the smoked sausage into slices and add to the potatoes.
  5. Spread the mixture out on a baking sheet in a single layer.
  6. Bake for 25-30 minutes until the potatoes are tender and golden brown.
  7. Remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted.
