  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1 teaspoon baking powder

  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add almond milk and honey to the mashed bananas and mix well.
  4. In another bowl, combine rolled oats, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. If desired, fold in chopped walnuts.
  7. Divide the batter evenly among the muffin tins.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Let cool before serving.
