Winter Minestrone

Warm up with this hearty winter minestrone, a delicious blend of vegetables and beans perfect for the colder months.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup cooked pasta

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until soft.
  3. Stir in garlic, zucchini, and green beans; cook for another 5 minutes.
  4. Add tomatoes, vegetable broth, and cannellini beans; bring to a boil.
  5. Lower heat and simmer for 20 minutes.
  6. Stir in Italian seasoning, salt, pepper, spinach, and cooked pasta; heat through.
