Vegetable-Loaded Hamburger Soup

  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup green beans, chopped
  • 1 cup corn
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in carrots and celery, cooking for a few minutes.
  4. Add the diced tomatoes and beef broth, bringing to a boil.
  5. Stir in green beans, corn, Italian seasoning, salt, and pepper.
  6. Reduce heat and let simmer for 30 minutes.
