Vegetable Raita is a cooling and refreshing yogurt-based dip that pairs perfectly with spicy dishes, making it ideal for any meal.

Ingredients

  • 1/2 cup cucumber, diced
  • 1/2 cup carrot, grated
  • 1/4 cup bell pepper, diced
  • 2 tablespoons fresh mint, chopped
  • 1/4 teaspoon cumin powder
  • Salt to taste

Instructions

  1. In a bowl, whisk the yogurt until smooth.
  2. Add diced cucumber, grated carrot, diced bell pepper, and chopped mint to the yogurt.
  3. Sprinkle in the cumin powder and salt, then mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
