  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • 1/4 cup flour
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil water and blanch the green beans for about 5 minutes, then drain and set aside.
  3. In a skillet, sauté the mushrooms and garlic until soft.
  4. In a medium bowl, whisk together the vegetable broth, coconut milk, flour, soy sauce, onion powder, and black pepper.
  5. Combine the green beans, sautéed mushrooms, and sauce mixture in a baking dish.
  6. Bake in the oven for 25-30 minutes until bubbly.
  7. Top with crispy fried onions and return to the oven for an additional 5 minutes.
  8. Serve warm and enjoy!
