Sweetpotato Taco Salad

A delicious and healthy Sweetpotato Taco Salad perfect for any gathering.

Ingredients

  • 2 large sweet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup red onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 3 cups mixed greens

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice sweet potatoes, then toss with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine roasted sweet potatoes, black beans, corn, bell pepper, avocado, and red onion.
  5. Serve over a bed of mixed greens.
