Sweet Potato Chickpea Protein Wrap

A delicious and nutritious wrap made with sweet potatoes and chickpeas.

Ingredients

  • 1 large sweet potato
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large whole wheat tortillas
  • 1 cup spinach, fresh
  • 1/2 cup hummus

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potato into small cubes.
  3. Toss the sweet potato with olive oil, cumin, paprika, salt, and pepper.
  4. Spread the sweet potato on a baking sheet and roast for 20-25 minutes, or until tender.
  5. In a bowl, combine the roasted sweet potato and chickpeas.
  6. Spread hummus onto each tortilla, add spinach and the sweet potato-chickpea mixture.
  7. Wrap the tortillas tightly and serve.
