- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 ripe avocado
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss with olive oil, paprika, and cumin.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
- In a bowl, combine black beans, corn, lime juice, and cilantro.
- Once sweet potatoes are done, combine them with the bean mixture and avocado.
- Serve immediately in bowls.
