Sweet Potato and avocado Taco Bowl

A delicious and healthy taco bowl featuring sweet potatoes and avocados.

Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 ripe avocado
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, paprika, and cumin.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. In a bowl, combine black beans, corn, lime juice, and cilantro.
  5. Once sweet potatoes are done, combine them with the bean mixture and avocado.
  6. Serve immediately in bowls.

Notes

  • For added flavor, consider adding diced onions or jalapeños.
