Slow Cooker Stuffed Bell Peppers

An easy and flavorful recipe for stuffed bell peppers made with turkey bacon.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 6 slices turkey bacon, chopped
  • 1 cup cooked rice
  • 1 can diced tomatoes, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Prepare the bell peppers by cutting the tops off and removing the seeds.
  2. In a skillet, cook the chopped turkey bacon until crispy.
  3. Add the ground turkey and cook until browned.
  4. In a bowl, combine the cooked turkey bacon, ground turkey, rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  5. Stuff each bell pepper with the mixture.
  6. Place the stuffed peppers in the slow cooker and cook on low for 6 hours.
  7. Serve hot and enjoy!

Notes

  • For extra flavor, you can top the peppers with cheese during the last 30 minutes of cooking.
  • Feel free to add more vegetables to the stuffing mixture.
