Slow Cooker Pot Roast

A delicious slow cooker pot roast that is easy to prepare, tender, and bursting with flavor.

Ingredients

  • 3 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme

Instructions

  1. Season the beef with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and sear the beef on all sides.
  3. Transfer the beef to the slow cooker.
  4. Add the beef broth, carrots, potatoes, onion, garlic, and thyme to the slow cooker.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Remove the beef, shred it, and return it to the pot.
  7. Serve hot with the vegetables and broth.

  • For extra flavor, add herbs like rosemary or oregano.
