  • 4 boneless chicken breasts
  • 2 cups long-grain rice
  • 1 lemon, juiced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 onion, diced
  • 1 cup frozen peas

Instructions

  1. In a slow cooker, add the olive oil and place the chicken breasts at the bottom.
  2. Pour the chicken broth and lemon juice over the chicken.
  3. Add the rice, thyme, rosemary, garlic powder, and diced onion.
  4. Stir to combine everything well.
  5. Cover and cook on low for 6-8 hours or until the chicken is cooked through and rice is tender.
  6. About 10 minutes before serving, add the frozen peas and mix well.
