  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

  • 1 bell pepper, chopped

Instructions

  1. In the slow cooker, place the chicken thighs, onion, and bell pepper.
  2. In a bowl, mix together chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken and vegetables.
  4. Cook on low for 6-8 hours until the chicken is tender.
