Slow Cooker Cowboy Casserole

A hearty and flavorful casserole made with ground beef, turkey bacon, and a variety of vegetables, all cooked to perfection in a slow cooker.

Ingredients

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Instructions

  1. In a skillet, cook the ground beef and turkey bacon until browned.
  2. Transfer the meat to the slow cooker.
  3. Add the black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper to the slow cooker.
  4. Stir well to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot and enjoy!

Notes

  • For a spicier kick, add jalapeños or hot sauce.
  • This dish can be topped with shredded cheese, sour cream, or green onions before serving.
