Slow Cooker Chicken Stew Recipe

  • 2 pounds boneless, skinless chicken thighs
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then remove and chop into pieces.
  2. In the same skillet, sauté onions and garlic until translucent.
  3. Add chicken thighs, chicken broth, carrots, potatoes, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Top with crispy turkey bacon.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  6. Shred the chicken in the pot before serving.
