Slow Cooker Chicken Pot Pie

A comforting slow cooker dish featuring tender chicken and vegetables in a creamy sauce, topped with a flaky crust.

Ingredients

  • 1 pound chicken breasts, cubed
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 package refrigerated pie crusts

Instructions

  1. Place the cubed chicken and mixed vegetables in the slow cooker.
  2. In a bowl, mix the cream of chicken soup, chicken broth, garlic powder, onion powder, and thyme. Pour over the chicken and vegetables.
  3. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  4. About 30 minutes before serving, place the pie crust on top of the mixture.
  5. Cook on high for the last 30 minutes until the crust is golden brown.

Notes

  • For extra flavor, add a splash of white wine to the sauce.
  • Feel free to use frozen vegetables to save time.
