Slow Cooker Chicken Enchiladas

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels

Instructions

  1. In a slow cooker, layer corn tortillas at the bottom.
  2. Spread half of the chicken, onions, and black beans over the tortillas.
  3. Drizzle half of the enchilada sauce on top.
  4. Add another layer of tortillas, followed by the remaining chicken, corn, and cheese.
  5. Pour the rest of the enchilada sauce over the top.
  6. Cover and cook on low for 4 hours.
  7. Serve warm, garnished with additional cheese and cilantro.
