Shepherd’s Pie Baked Potato

A delicious and hearty take on the classic shepherd’s pie, served in a baked potato.

  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in the potatoes with a fork and bake for about 45-60 minutes until tender.
  3. In a skillet, brown the ground beef or lamb over medium heat.
  4. Add the peas, carrots, beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Simmer for 10 minutes.
  5. Once the potatoes are baked, cut them open and fluff the insides with a fork.
  6. Add butter and sour cream to the potato insides, mixing well.
  7. Stuff the potatoes with the meat mixture and top with shredded cheese.
  8. Return to the oven for an additional 10 minutes until the cheese is melted and bubbly.

Notes

  • For a vegetarian option, replace the meat with lentils or a meat substitute.
  • Feel free to add additional vegetables according to your preference.
