  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 1/2 cups fresh raspberries

Instructions

  1. In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Add fresh raspberries and fold gently.
  5. Pour the filling over the crust and smooth the top. Refrigerate for at least 4 hours to set.
  6. Top with additional raspberries before serving.

Notes

  • For a more intense raspberry flavor, consider adding raspberry puree to the filling.
  • Allow the cheesecake to set overnight for a firmer texture.
