- 1 1/2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 1 1/2 cups fresh raspberries
- In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Add fresh raspberries and fold gently.
- Pour the filling over the crust and smooth the top. Refrigerate for at least 4 hours to set.
- Top with additional raspberries before serving.
