Ingredients

  • 2 cups water
  • 1 banana, sliced
  • 1/2 cup blueberries
  • 1/4 cup almonds, chopped
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/4 cup Greek yogurt

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool slightly.
  5. Top quinoa with sliced banana, blueberries, chopped almonds, honey, and cinnamon.
  6. Add a dollop of Greek yogurt on top and serve.
