Quick and Easy Instant Pot Chicken Recipe for Busy Nights

A delicious and effortless chicken recipe perfect for busy weeknights using your Instant Pot.

  • 2 pounds chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Turn on the Instant Pot and set to sauté. Add olive oil.
  2. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  3. Once the oil is hot, add the chicken and sear on both sides for about 2-3 minutes.
  4. Add the chicken broth to the pot.
  5. Close the lid, set to pressure cook on high for 10 minutes, and make sure the valve is sealed.
  6. Once the cooking time is completed, allow for a natural release for 5 minutes, then do a quick release for any remaining pressure.
  7. Remove the chicken and shred it. Return it to the pot to soak up the juices before serving.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
  • This recipe works well with frozen chicken breasts as well, just increase the cook time to 12-15 minutes.
