  • 1 cup pumpkin puree
  • 2 large eggs
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the sugar, oil, pumpkin puree, and eggs until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. In a small bowl, beat the cream cheese with the powdered sugar and vanilla until smooth.
  6. Fill muffin cups halfway with the pumpkin batter, then add a dollop of cream cheese mixture on top, and cover with more pumpkin batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.
