Portobello Egg Bake

A delicious breakfast recipe featuring Portobello mushrooms and turkey bacon.

  • 2 large Portobello mushrooms
  • 4 large eggs
  • 4 slices turkey bacon
  • 1 cup shredded cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop it.
  3. Brush the Portobello mushrooms with olive oil and place them on a baking sheet.
  4. Sprinkle garlic powder and black pepper inside each mushroom.
  5. Distribute the chopped turkey bacon and shredded cheese evenly into each mushroom cap.
  6. Crack an egg into each stuffed mushroom.
  7. Bake in the preheated oven for 20-25 minutes or until the egg whites are set.

  • For a vegetarian option, omit the turkey bacon and add more cheese or vegetables.
