Pesto Pasta with Roasted Tomatoes

A quick and flavorful dish that combines pesto and roasted tomatoes for a perfect weeknight meal.

  • 12 ounces pasta of your choice
  • 1 cup pesto
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine halved cherry tomatoes, olive oil, salt, and black pepper.
  3. Roast the tomatoes for 20-25 minutes until they are soft and caramelized.
  4. While the tomatoes are roasting, cook the pasta according to package instructions. Drain and set aside.
  5. Toss the cooked pasta with pesto until well coated.
  6. Add the roasted tomatoes and mix gently.
  7. Serve warm, topped with grated Parmesan cheese.
